Hey Y’all! Welcome back to Falling In Love With Fitness! I am so excited that you are here for another blog post. Today, I will be sharing some of my favorite easy, simple meals that are cheap, healthy, and easy to make with limited resources! 

 

As a college student, it is hard to make meals that are good for you, especially when you are living in a dorm. Currently, I am living in a freshman-style dorm as an RA, so I have had to get creative in my “kitchen” or lack thereof. Utilizing on-campus dining locations is a great option, but eating Chick-fil-a 3 times a week can get boring. When I started my wellness journey, I learned that 20% is fitness and 80% is nutrition. We need to prioritize the food that we are putting into our bodies because that is what we’re using as fuel. After moving back into a dorm without a kitchen, I was determined to continue eating well.

 

I want to share some of my favorite recipes that you can make as a college student in your dorm or someone with limited resources available. If you have a mini fridge and a microwave, you can make all of these meals! They are also super quick and pretty low-cost. I buy all of my ingredients at Kroger and Walmart. I specifically get my produce from Kroger and more shelf items from Walmart. But you can find most of these items at your local grocery store. So now let’s jump into the recipes!

 

Dorm Friendly Recipes

Mexican Salad

Ingredients:

  • Real Good Frozen Chicken Nuggets
  • Shredded IceBreg Lettuce
  • Tri Colored Slaw
  • Green Bell Pepper
  • Red Onion
  • Jalapeños
  • Shredded Cheddar Cheese
  • Fiesta Tortilla Strips
  • Taco Bell Mild Sauce
  • Walden Farms Chipotle Ranch Dressing

Instructions:

  1. Cook 1 serving of Real Good chicken nuggets in the microwave per the bag instructions
  2. While heating, add 1 cup of shredded lettuce and 1 cup of tri colored slaw into a large bowl
  3. Then chop green bell pepper, red onion, and jalapeños
  4. Add 1/3 cup of green bell pepper & red onion and 2 tablespoons of jalapeños
  5. Cut chicken nuggets into smaller pieces and add those to the bowl
  6. Then add 2 tablespoons of shredded cheddar cheese & fiesta tortilla strips 
  7. Top with as much Taco Bell mild sauce and chipotle ranch dressing as your heart desires
  8. Lastly, mix all ingredients
  9. Now Enjoy!
Nashville Hot Chicken Cottage Cheese Bowl

Ingredients:

  • Real Good Frozen Chicken Nuggets
  • Mini Yellow Potatoes
  • Tri Colored Slaw
  • Cottage Cheese
  • Frank’s Red Hot Sauce
  • Hidden Valley Ranch Seasoning
  • Cocktail Dill Pickles

Instructions:

  1. Cut 3 mini yellow potatoes into small chunks
  2. Steam potatoes in the microwave wrapped in a damp paper towel for 3 minutes
  3. Then cook 1 serving of Real Good chicken nuggets in the microwave per the bag instructions
  4. Once cooked, add potatoes and chicken to a bowl
  5. Add 1 cup of tri colored slaw and 1/2 cup of cottage cheese into the bowl
  6. Mix everything
  7. Then season the bowl to your liking with the ranch seasoning and mix
  8. Do the same thing with the hot sauce
  9. Lastly, chop up 2 cocktail pickles and mix them into the bowl
  10. Now Enjoy!
Chicken Salad Wrap

Ingredients:

  • Pre-made Rotisserie Chicken
  • Light Mayo
  • Red Onion
  • Cocktail Dill Pickles
  • Shredded Cheddar Cheese
  • Carb Smart Tortilla
  • Cumin
  • Salt
  • Pepper
  • Garlic Powder
  • Onion Powder

Instructions:

  1. First, remove bones from the rotisserie chicken and shred
  2. Then add shredded chicken to a bowl with enough light mayo so all chicken is lightly coated
  3. Next season to taste with cumin, salt, pepper, garlic powder, and onion powder
  4. Now add diced red onion *about 1 cup and shredded cheese *about 1/2 cup to the bowl 
  5. Mix everything
  6. Once combined, spoon some of the chicken salad onto a tortilla and wrap
  7. Lastly, I add 4-5 cocktail pickles on the side to eat with the wrap, or you could chop them and add them directly into the salad
  8. Now Enjoy!
  9. *Refrigerate any extra chicken salad – 1 rotisserie chicken makes about 10 wraps
Yogurt Bowl

Ingredients:

  • CARBmaster Vanilla Yogurt
  • Raspberries
  • Sugar Free Cheesecake Pudding Mix
  • Peanut Butter

Instructions:

  1. Add 2/3 cup of yogurt to a bowl
  2. Then mix in pudding mix powder until you get the consistency you want *I like around 1-2 teaspoons
  3. Once combined, add 1 tablespoon of peanut butter to a microwave-safe bowl and heat for 15-30 seconds
  4. Drizzle melted peanut butter on top of the yogurt base
  5. Add a handful of raspberries 
  6. Now Enjoy!
  7. *Optional: add cereal or Annie’s bunny grahams for some crunch
